Birchwood Inn Florentine Bars

Ingredients:
Crust:
• 1 and 1/3 stick of butter melted and cooled
• 1 and 1/3 cup all-purpose flour
• 1/3 cup of confectioner’s sugar
• ¼ tsp salt
• 1/3 cup sliced almonds

Filling:
• 2/3 cup superfine sugar
• 2/3 stick of butter cut into half inch slices
• 1/3 cup of heavy cream
• ¼ cup honey
• ½ tsp salt
• ¾ cup of dried cherries chopped
• ¾ cup of dried Apricots chopped
• 1 tsp orange zest
• 1 tsp lemon zest
• 1 cup of chopped almonds

To make the crust, heat oven to 350 degrees f. Line a 9 x 13 pan with foil. Pulse the flour, confectioner’s sugar salt and almonds in a food processor for about 60 seconds. Stir in butter with fork and divide into 8 portions and and press into the pan. Bake for 15 – 16 minutes and let stand for 8 – 10 minutes.
For the filling put the first 5 ingredients in a pan and bring to boil. Stir gently and remove from heat as necessary to keep mixture down..simmer for 1 minute. Add the remaining ingredients and cook for 6 – 8 minutes. The mixture will thicken and darken with a caramel appearance. Pour onto the crust and bake for 13 – 15 minutes. Allow to cool. Lift the foil out of the pan onto a work surface and cut into bars.
